Vegan Mexican Food Class
Mexican food is my family's favorite cuisine! We're so surprised we don't miss the cheese at all since it is such a star in Mexican foods. As long as there is plenty of avocado & cashew sour cream to make up for the lost fat and richness, again, there's no missing the dairy!
- Mexican Cucumber Salad (summer only) - A crisp, fresh side salad perfect for the spicy Chipotle 'stew' & the Jalapeño Poppers below
- Raw Jalapeño Poppers - These are seriously better than the fried 'real' ones. Being that they are so healthy you will need to make extra as they go quick!
- Smokey Chipotle Red Beans & Rice - We eat this at least twice a week in my home. It's a family favorite and even better in the crock-pot!
